Celebrated chef Mark Hix has created a menu of British classics that executive chef Lee Kebble puts together brilliantly, using only the finest seasonal ingredients and working with the best suppliers including Hannan Meats, which supplies the restaurant with beef that is extra-aged in a Himalayan salt chamber, and bacon chops, which are used in the restaurant’s signature sugar-pit bacon chop dish.
